There's no chopping of veggies or mixing of egg substitute for this vegan meatloaf. Literally all you have to do is dump everything in a bowl, mix, throw it in a baking dish and in like 40 ish minutes you've got a meal that took 5 minutes to prep. If that, honestly.
I love serving this meatloaf with my deliciously creamy instant pot mashed potatoes, as well as my vegan mac salad!

The Easiest Vegan Meatloaf ( Beyond Or Impossible Burger)
Equipment
- 1 9x13 Glass Baking Dish or similar
- 1 large bowl for mixing
Ingredients
- 1 package vegan ground beef your favorite brand
- ¼ cup panko bread crumbs
- 1 Tablespoon ketchup
- 2 Tablespoons TB Seasoning
- 1 Tablespoon garlic powder
- 1 bag frozen cauliflower rice
- pinch of salt and pepper to taste
Instructions
- Preheat your oven to 350F or 180F
- In a large bowl add all of your ingredients (yes all ingredients) and with a hand, mix everything together until well mixed.
- Shape your meat loaf in a 9x13 baking dish.
- Bake for 35-40 minutes,
- Slice and serve.
Notes
- For Gluten-free use GF bread crumbs.
- I like to use the cauliflower rice that has other veggies riced into it. It's an easy way to get veggies in your meal!

- You can use any plant based ground meat of your liking. We have impossible and beyond available to us so that's what I've used here.
- Bread Crumbs are panko, but if you need gluten-free, be sure to use gluten-free bread crumbs.
- Spice Blend in this case is Tabitha Browns Like Sweet Like Smokey (this is an affiliate link) seasoning. However, you may use any seasoning you like. Make this meatloaf yours.
- To make it super easy to get veggies in, especially when you just can't be bothered, I use riced cauliflower with the peas and carrots.
