Amazing Vegan Carrot Cake Cupcakes

What's so great about them?

Fluffy, moist carrot cake in hand held form? Yes please! Simple ingredients, and great for holiday parties!

What you'll need to make this

2 1/2 cups AP flour 1 1/2 cups brown sugar 1 tsp baking soda 2 tsp cinnamon 1/8 tsp salt 1/2 cup oil 2 servings egg substitute 3/4 cup plant milk + 1/4 cup 1 tsp vanilla 3 cups shredded carrots

 Step 1

Sift the dry ingredients into a large enough bowl

 Step 2

Add the brown sugar and whisk everything together

 Step 3

Add the wet ingredients 

 Step 4

Mix everything together. If the mixture is still a bit dry, add the 1/4 cup extra plant milk. It should be thick and sticky batter

 Step 5

Throw in the carrots and fold them into the batter.

 Step 6

Fill greased muffin tins with 3/4 of the batter filling

 Step 7

Bake at 350 for 30-40 minutes or until a toothpick comes out clean, then place on a cooling rack
