Add soy curls to a large bowl, add seasonings and water just to the top of the curls and let set for 10-30 minutes. Alternatively, you can use veggie stock.
For this recipe, I am using bell peeppers and celery. Feel free to use any veggies you want (onion is always a fun choice!)
Next, start making the dressing: Mayo, mustard, dry dill, vinegar, salt, pepper, & sugar.
Drain and squeeze excess liquid from the soy curls, then place them on a cutting board or in a food processor and roughly chop.
Add the soy curls, mayo dressing and diced veggies to a large bowl and mix everything together well!
