Vegan Stuffed Pepper Soup

What you will need:

Fresh Tomatoes (or tomato sauce) Bell Pepper Cooked rice Tomato paste TVP

Cumin Chili powder Garlic powder Sugar Salt & Pepper Veggie bouillon

Step 1

Dice up the bell peppers & tomatoes (if using fresh)

Step 2

Add a little bit of oil to a pot or dutch oven over medium-high heat and saute' the bell peppers until softened and translucent.

Step 3

Next, throw in the tomatoes. If you are using the sauce rather than fresh tomatoes, just add the sauce.

Step 4

Add in 1 Tbsp of tomato paste and mix in.

Step 5

Add all spices: 1 Tbsp. cumin 1 Tbsp. chili powder 1/2 Tbsp. garlic powder

1 veggie bouillon 1 tsp. sugar pinch of salt and pepper

Step 6

Add in TVP or any type of vegan mince you would like. Mix it in.

Step 7

Add in 2 cups of water. (Can replace bouillon cube and water with veggie stock)

Step 8

Add in about 2 cups of cooked rice. (This recipe is great for using up leftover rice!)

Step 9

After a few minutes of bringing the soup back up to temp, add in another cup of water.
