Vegan Cheesy Zucchini Sausage Casserole

A few simple ingredients

Step one

Dice roughly 3 cups of zucchini into small, even dices.

Step two

In a pot or dutch oven, add a touch of oil and then add the zucchini. Saute' until soft and starting to char.

Step three

Add in 1lb of vegan ground sausage. (this uses my very own plant-based sausage crumbles, click below to get the recipe!)

Step four

Add in about 2 cups cooked rice and mix up.

Step five

Add in 1 cup vegan cheese shreds and mix around.

Step six

Throw in 1/2 Tbsp of garlic powder and a pinch of salt.


Sprinkle remaining cup of cheese over the top, cover and bake at 350F/180C for 20 minutes and serve!
